I don't know how long you fight with one ship, but i think you fight long enough to give enought time to the enemy to catch you and attack you. If you accept a mission to attack an escort or pirates then it doesn't show all the ships which will attack you. I never even see the other ships when the first battle starts. Sometimes it's three ships that end up attacking me.
